The
production area extends along a small hilly terrace that positively affects the
climate and the nature of the landscape and where the Castle of San Salvatore
overlooks the pleasant small town of Susegana. In the winery the vines are
all cultivated with the "sylvoz" training system, typical of the area,
by means of which the right vegeto-productive balance can be obtained. Vine
growing is done manually or with the help of simple tools. The Prosecco vine
is plain and vigorous, with hazel-coloured vine-shoots and long, loose grape bunches
whose golden yellow colour peeps out of the green leaves. The Prosecco production
conforms to very strict e rigorous regulations. The grapes must only come from
vineyards of the area established by law and the vinification must take place
within the boundaries of the DOC area.
